Where’s the Beef…er…of the Non-Animal Kind?

Being a vegetarian in Thailand is not the easiest of lifestyles to maintain– throw in 25-35 miles of running per week and you have the makings of a disaster. The main problem that I am having is being able to consistently find sufficient sources of protein. Tofu, my main source of protein in the states, can be found, but it is not as readily available in the rural rice-farming village that I call home. I do eat a lot of eggs and drink a lot of soy milk, but that can only go so far (and after a while the repetition can be an assault to one’s taste buds). So, I’ve come up with a back-up protein: peanut butter. The problem? I can’t find any without trans fats (the horror!). Solution? Make my own.
I came across this embarrassingly simple recipe for making homemade peanut (or almond) butter at Joy the Baker, a great food blog. The photos are absolutely beautiful (verging on food porn) and the recipe is so easy that I feel a little dumb that I didn’t know it before! Now, where to find a food processor…
